Vegan Raw peanut butter banana ice cream sandwiches

  Ingredients:

3 Frozen Bananas
1/4 cup peanut butter
1/4 cup coconut oil
1/4 cup cocoa butter
1/4 cup Brazil nuts
1/4 cup dates (you can use prunes)
1/4 cup agave nectar
2 tbsp cocoa powder
1/4 cup rolled oats

Preparation:
Cookie Base
In a food processor blend the peanut butter, nuts, dates, and rolled oats. Then take this mix and press equal amounts into two containers lined with plastic wrap, approximately 1/2 inch thick in each container. Place both containers in the refrigerator.

Ice Cream
Add bananas and melted coconut oil to a food processor. Blend until smooth.

Once the cookie base is ready, pour the ice cream on top of one base and then place the other cookie base on top forming an ice cream sandwich.

Take the ice cream sandwich back to the freezer.

Chocolate topping
Melt the cacao butter inside a container sitting inside a pot with boiling water. Add the agave syrup and 1 tablespoon of peanut butter. Then stir in the cocoa powder and mix well until completely melted.

Cover the sandwich with this chocolate syrup and return again to the freezer. Finally, offer your food to Divine and enjoy!
